Fabulous and easy vegan French Toast

After posting this recipe on a Twitter account I was using when I ran a food company (back in 2008) I ended up with almost 500 new followers in a single day!

This French Toast is so much like the traditional version that I have had people who don’t like eggs tell me ‘it’s too eggy’! I have fed this to children and adults alike, and honestly, they always ask for more.

RECIPE IN SHORT: blend soft tofu with a dash of salt; soak bread slices in mix for 5 min; pan fry; and top as you wish with fruits, nuts and syrup.



1 (350g) package of silken/soft tofu

¼ ts. sea salt

Optional: ½ ts. of either vanilla or ground cinnamon

8 slices of whole grain bread; OR 10-14 slices of smaller thick cut home-baked bread

(if you are cooking for fewer or less hungry people you can save the tofu mix for a few days in a sealed container, or blend less).

2 tbs. vegan margarine, coconut oil, grapeseed oil, etc.


¼-1 cup pure maple syrup OR agave nectar OR sugar beet syrup OR any other sweetener you chose

1 – 2 cups of: fresh (or frozen) berries—blueberries, raspberries, blackberries, strawberries, black raspberries, salmon berries, currants, others, or a mix; chopped bananas and walnuts; cooked cinnamon apples; cooked berries (from fresh or frozen); or whatever you like.

OR 1 – 2 cups of whipped coconut cream



Lay bread slices evenly in a large glass baking pan, casserole dish, or deep baking sheet, trying not to overlap

Place tofu, salt and optional ingredients in a bowl (if using a handwand), or in blender/food processor

Blend tofu mixture until smooth

Poor and spread blended tofu over the bread slices using a rubber spatula or wooden spoon, until coated

Flip bread (carefully) and repeat coating the other side

Allow bread to sit for 5-10 min.

In the meantime, heat a large frying pan on low-med heat (it depends on your stove, but around 10:00; slightly closer to low than medium). *You may need to cook in batches or use more than one frying pan.

Add margarine or oil to the pan and ensure complete coverage.

Place as many of the soaked/coated bread slices that fit in the pan downside down.

Evenly top bread slices with remaining tofu mix.

Cook for 10-15 min (until golden brown on downside) then flip each slice and rearrange for even cooking (if necessary). Add more ‘fat’ if necessary.

Cook another 10 min on other side. Remove from heat and serve. Top generously with desired toppings.

Serves 3-5 depending on the bread and the hunger level of the crowd. Serve on its own, or alongside crispy smoked tofu or tempeh, veggie bacon or sausage.
